Omega Institute, Rhinebeck

On walks around the Omega property, we embark on a wide-ranging exploration of edible and medicinal plants. We learn to identify and taste locally growing plants and come to understand how the flavors of plants correspond to their properties. We explore their physiological effects, constituents, energetics, historical and current medicinal uses, other common uses, natural range, contraindications, dosages, and many basic first aid applications. We then get to put what we have learned into action by making several herbal and raw food preparations to achieve health, mitigate illness, and correct physiological imbalances.
